Shrimp & grits for dinner! You know we love those @marshhenmill grits, and the Guinea Flint variety was calling my name tonight.

Sautéed some shrimp seasoned with @meatchurch Blanco in some butter, garlic, and lemon juice. Once it was cooked, added some roasted red peppers, heavy cream, and fortified wine. Let it thicken up a bit and then spooned over the grits, topped with green onions. Absolutely delish.

Another "let's get weird" recipe using whatever is in the fridge and pantry.

•Sautéed some onions, orange bell pepper, and kielbasa in @sauce olive oil.
•Made some @marshhenmill freekeh using chicken stock instead of water. When it was done, stirred in a homemade shawarma rub.
•Made a finishing sauce of honey Greek yogurt, lemon juice, garlic, fresh dill, and chile oil.
•Topped with green onions.

Totally weird collage of ingredients and flavors, but NGL, it was 🔥

When it comes to the act of barbecue, it has one major advantage over other types of cooking. Both have the ability to bring people together, sure, but while most cooking involves a stove, oven, or other inside device, barbecue generally involves cooking in the great outdoors, exposed to the elements, good or bad.

It presents an opportunity to spend time outside, away from creature comforts. Just you, the fire, and whatever creatures roam the land you're on - it is their comfort zone, after all.

Last week's spot had this breathtaking view in the mountains of western North Carolina. The Smoky Mountains set the distant horizon, and since it was still sick season (ht @noahkahanmusic) the views stretched on for miles. Unfortunately, no bears paid a visit, but the 8th different state I've taken this trusty little @pkgrills was an awe-inspiring experience nonetheless.

Our last meal in the Smokies was possibly the best. We brought all of our meat for the week with us, and I had planned to make thick cut pork chops this night, but when I opened them up they smelled bad, so I smoked the 2nd tri-tip that I brought. Earlier in the week, I had made a batch of burgundy mushrooms for the pork chops, so I reprised them for this meal.

First, I brined the tri-tip all day in a mixture of red wine, Italian dressing, worcestershire sauce, garlic, and seasonings. Smoked & reverse-seared the tri-tip on the @pkgrills, sliced, drizzled with some of the burgundy mushroom sauce and homemade chimichurri, then plated alongside the mushrooms and some @marshhenmill Farro. Such a great meal with flavor and textures.

Hot chicken sandwich in the Smokies! Brined some chicken thighs all day in a pre-made spicy marinade, then smoked them on the @pkgrills. Made a Nashville hot style sauce with oil, cayenne, brown sugar, garlic, and paprika. Dunked the smoked thighs in the sauce, then plated on a grilled bun with mixed greens and raw onion. It was fantastic.

Brought a little Chicago with me to the Smoky Mountains and it's the perfect way to send off International Whiskey Day. The cask strength The Last Lion from @beautifuldamnedwhiskey is a whiskey as beautiful as the sun setting over the Smokies.

A blend of 75% corn, 21% rye, 4% malted barley, and 60% corn, 36% rye, 4% malted barely mashbills from MGP, aged for 6+ years, and bottled at 115.4 proof, it's a delicious high-rye bourbon expression that hits all the right notes.

Whether they distil it themselves or not is irrelevant when it's this good, and I can't wait to see what they come up with next.
