Grilled Peach Cobbler

4 TBSP Lane’s Chocolate Sea Salt Caramel Seasoning (divided)
3/4 cup all-purpose flour
3/4 cup old-fashioned oats
1/4 tsp salt
3/4 cup brown sugar
1 stick butter
1/2 cup chopped pecans

Directions

If you like peaches but have never tried grilling them, you don’t know what you’re missing. Tossing them on a hot grill for a few minutes enhances their flavor even more, especially when covered in Lane’s new Chocolate Sea Salt Caramel Seasoning. Yes, Lane’s BBQ developed a line of dessert seasonings and this is the one that started them all. A couple years ago, as part of their Pitmaster’s Select series, Lane’s released bi-monthly special rubs via subscription. This was No. 5 of 6, and the only dessert rub. It received such great feedback that they created a few more!

For this recipe, start by slicing your peaches into about eight wedges apiece. You can slice your peaches in half and put them on the grill face down if you want, but slicing them even smaller allows for grilling more surface area of the peach. After slicing, place them in a bowl and toss with 3 tablespoons of your Lane’s Chocolate Sea Salt Caramel Seasoning. This stuff has sugar, caramel flavored sugar, cocoa powder, Kosher salt, vanilla bean sea salt, cinnamon, and nutmeg in it, making it the perfect seasoning to most any dessert and a great topping for ice cream.

After mixing up your peach slices really well (being careful not to smash them), place them into a grilling basket and onto a hot grill. You want the seasoning to caramelize onto the peaches, which won’t take long. Be sure to give the basket a few shakes to turn your peach slices and get each side grilled. It should take less than 10 minutes.

In a separate bowl, mix together 3/4 cup of flour, 3/4 cup of oats, your other tablespoon of Lane’s Chocolate Sea Salt Caramel Seasoning, 1/4 teaspoon of salt, and 3/4 cup of brown sugar. Stir it all together really well and make sure there aren’t any big clumps. Now, take a stick of cold butter and cut it into small cubes. Mix these into your bowl, using your hands or a pastry blender to squeeze the cubes into the rest of the dry ingredients. In this case, clumps are fine, just make sure all your cubes of butter are mixed/covered with the rest of the ingredients and it’s all well incorporated. Finally, mix in your 1/2 cup of chopped pecans.

Dump your grilled, caramelized peaches into a baking dish and then pour your dry ingredient mixture on top of them. Spread it all out evenly and place into a preheated 350 degree oven or grill. This will cook for about 40 minutes until the topping is nice and crispy and golden brown. Let cool slightly and serve warm, topped with vanilla ice cream. Sprinkle a couple shakes of your Lane’s Chocolate Sea Salt Caramel Seasoning over top and you’ve got yourself a fantastic dessert.
